Oh my dear readers! I have neglected my blog the past few weeks and I hate that, but sometimes it can't be helped. I have some exciting things planned for the New Year and I can't wait to share them with you! Also, I have been losing weight (Yay!) thanks to Jorge Cruise and his Body Fat Cure, and this morning I had a fantastic breakfast that I wanted to share. Read on past the break for all the details!
Well, I have lost 38 lbs following the Belly Fat Cure by Jorge Cruise. I love it, it is a modified low-carb lifestyle, but it emphasizes good carbs and all carbs in moderation. I have never once felt deprived on the plan and it is definitely doable for life. That said, I have about 30 lbs to go, I will keep you updated on my progress.
This morning I had a fabulous breakfast. I just made up a recipe as I went and it was a very happy morning because I had "French Toast"! Here is my recipe, just think, I cared enough to share it with you guys!
French Toast-like Muffins
¼ Cup Ground Flax Seed
2 TBS Low-Carb Baking Mix (I use Bob's Red Mill)
1 TBS Coconut Oil
1TBS Butter
6 Drops of 2 TBS Sugar Equivalent
1 tsp baking powder
Pinch of Salt
Large Egg
Optional: Butter for frying
A Large Coffee Mug
Sugar-Free Pancake Syrup for topping (be careful, even though its sugar-free, its pretty carby at 11gms per serving! You really need very little, that way it is not so bad).
1. Melt Butter and Coconut Oil in mug
2. Add Egg and mix very well
3. Add Flax and Baking Mix stir well
4. Add Baking Soda and pinch of Salt stir really well
5. Cook in Nuker for 2-2:30 mins.
6. Either cut in half and drizzle with syrup -or- for a special treat slice into 3rds and fry in butter on the stove, then top with syrup.
This tastes exactly like real french toast! It is my new fave.

As I still have not found my camera, I have no pictures. I asked Santa for a new one, let's hope he comes through for me, I have been pretty good so far, lol!
In other news, I wanted to let you know that I have a plan for the new year. I recently picked up a kindle book called 365: A Daily Creative Journal - Make Something Every Day and Change Your Life. It is written by Noah Scalin and is available at Amazon. Any hoo, I thought it would be fun to follow along in the book and post my progress here. So that is what the major plan is for 2013. I hope you will continue to read and we can learn and grow together.
In the best news, my lovely hubs is taking me on a Caribbean Cruise for my birthday, which is December 18th. We are leaving from Baltimore, and I cannot wait for this!!! We booked it in January, so it has been a long time coming! At any rate, I will be missing most of December, but stay tuned, cause 2013 is gonna be the best year yet for Makings and Musings!
